Two easy cheesecake recipes

A creamy filling and buttery biscuit base, who can resist this classic party dessert? A cheesecake will impress your guests every single time. Today, I have not one, but two easy cheesecake recipes that even my kids are able to make from scratch.

Cheesecake

Cheesecake is a sweet dessert consisting of one or more layers. The main, and thickest layer, consists of a mixture of soft, fresh cheese, eggs, and sugar. If there is a bottom layer, it often consists of a crust or base made from crushed cookies, graham crackers, pastry, or sometimes sponge cake

Cheesecake Recipes

First up is a conventional cheesecake with a tennis biscuit base. This recipe can also be used to make individual mini cheesecakes.

Summer berry cheese cake

  • Servings: 8
  • Difficulty: easy

Ingredients

    Biscuit Base

  • 1 pkt tennis biscuits
  • 100 ml melted butter
  • Filling

  • 1 can condensed milk
  • 1 tub plain smooth cottage cheese
  • 60ml lemon juice
  • Your fav toppings

Directions

  1. Preheat oven to 180 degrees.
  2. Crush biscuits until fairly smooth then add melted butter. Mix well.
  3. Layer base of spring-form cake tin and set aside.
  4. Mix the filling ingredients and pour onto base.
  5. Pop into over, close door and switch oven off. Leave in oven for 30 min.
  6. Remove from oven, allow to cool. Decorate with fruit and serve chilled.

Base with a Twist

I recently planned to make the Summer Berry Cheesecake but realised that I didn’t have Tennis biscuits in my pantry. Due to the Coronavirus lock-down we only visit the grocery store once a week. As I was still craving that cheesecake, I attempted one with a twist on the the base. So here is that recipe.

Almond crust cheesecake

  • Servings: 8
  • Difficulty: easy

Ingredients

    Almond Crust

  • 2 cups slivered almonds
  • 1/4 cup packed light-brown sugar
  • 2 tbsp unsalted butter, melted
  • Filling

  • 1 can condense.d milk
  • 1 tub plain smooth cottage cheese
  • 60ml lemon juice
  • Your fav toppings

Directions

  1. Preheat oven to 180 degrees.
  2. Pour sugar and almonds in to a blender. Blitz until desired texture for crust has been achieved.
  3. Add melted butter and mix well. Pour the almond crust filling into a spring-form cake tin that has been sprayed with cook and spray.
  4. Mix the filling ingredients and pour onto base.
  5. Pop into over, close door and switch oven off. Leave in oven for 30 min.
  6. Remove from oven, allow to cool. Decorate with fruit and serve chilled.
