  • 400 g flat mushrooms
  • 8 tsp unsalted butter
  • 2 large garlic cloves, minced
  • Salt and pepper
  • Fresh finely chopped parsley

  1. Preheat oven to 180 degrees celcius.
  2. Wash mushrooms then place cap side down in an oven proof dish or pan.
  3. Sprinkle with salt and pepper.
  4. Add a 1/4 teaspoon of minced garlic onto the top of each mushroom.
  5. Add the teaspoon of butter onto each mushroom.
  6. Pop into the oven and allow to bake for 10 to 15 minutes.
  7. Remove from oven, garnish with the parsley and serve.

  • 250 g button mushrooms
  • 1 cup fine bread crumbs
  • 2 – 3 eggs
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp chilli powder
  • 1/2 tsp black pepper
  • Salt to taste
  • 1/4 tsp red chili flakes
  • 1/4 tsp dried thyme
  • Vegetable oil for deep-frying

  1. In a bowl beat eggs adding salt and pepper.
  2. In a second bowl combine the rest of the dry ingredients.
  3. Coat washed mushrooms in the egg mixture.
  4. Then immediately coat with the dry ingredients you combined together.
  5. Allow to stand in the fridge for 30 minutes to an hour (optional).
  6. Deep fry in vegetable until golden brown.
  7. Remove from oil and drain excess oil.

A hearty Sunday dish

  • 2 kg beef, trimmed of excess fat
  • 100 g diced bacon
  • 30 ml olive oil
  • 15 ml butter
  • 10 ml herb seasoning
  • 5 ml pepper
  • 3 large onions peeled and cut into quarters
  • 2 cloves garlic, minced
  • 2 bay leaf
  • 50 ml cake flour
  • 500 ml red wine
  • 500 ml water
  • 30 ml beef stock
  • 60 ml tomato paste
  • 250 g button mushrooms

  1. Brown the beef and bacon bits in the oil and butter.
  2. When nicely browned remove and set aside making sure to drain the excess oil.
  3. Season the meat with the seasonings.
  4. Cut the onions into quarters then saute in the same saucepan.
  5. Add the bay leaf, garlic and carrots stir then add the flour and mix until all the veg has been coated.
  6. Add the tomato paste, wine, water and stock bringing to a boil.
  7. Add the meat to the pot, cover and simmer for 2 to 2 .5 hours until meat is tender.
  8. Brown the button mushrooms in olive oil in a separate flying pan then add to the pot.
  9. Simmer for 20 minutes then server with mash or rice.

A saucy affair

  • 30 ml butter
  • 1 small onion, finely chopped
  • 2 tsp garlic, minced
  • 500 g sliced mushroom
  • Fresh finely chopped parsley
  • Salt and pepper to taste
  • Fresh thyme

  1. Heat the oil and saute the onion and garlic for 1 minute.
  2. Add the mushrooms and saute for a few minutes.
  3. Add seasoning and thyme.
  4. Add the cream and allow to simmer for approximately 5 to 8 minutes until thickened.
  5. Serve with with our fav dish.

Perfect family meal

[recipe title=”Chicken and mushroom phyllo pie” servings =”6 – 8″ time=”90 minutes” difficulty=”intermediate”]
  • 4 chicken breasts
  • 1 punnet sliced mushrooms
  • 1 diced onion
  • 3 tbsp olive oil
  • 1 tsp garlic, minced
  • 250 ml sour cream
  • Salt and pepper
  • 3 springs of fresh thyme
  • 10 sheets of ready-made phyllo pastry

  1. Heat the oil the add the onion. Cook until translucent.
  2. Add the garlic and mix.
    Cook for a minute but be careful not to burn.
  3. Add the diced chicken breast pieces, thyme and season with salt and pepper. Mix well allowing the chicken to cook.
  4. When the chicken is almost done add the mushrooms.
  5. Allow mushrooms to cook for 4 to 5 minutes then add the sour cream. Allow to cook for a further 10 minutes. Remove from heat and set aside.
  6. Set the oven to 180 degrees Celsius
  7. Use an oven proof pie dish and lightly coat the inside with olive oil.
  8. Using ready made phyllo pastry (follow instructions on the box) and place one layer at a time into the pie dish. Make sure that the phyllo pastry will be able to fold over once the filling has been added.
  9. Brush each later of phyllo pastry with olive oil. You can use about 6 to 8 sheets of pastry.
  10. Fill the phyllo pastry cover pie dish with the chicken and mushroom mixture.
  11. Carefully fold each piece of phyllo pastry over the filling, alternating between layers. Don’t worry is it breaks or tears. You can use the olive oil to repair.
  12. Pop into the oven and cook until the phyllo pastry is golden brown.
